Super Quick Shredded Chicken Wrap or Nachos (House Favorite)
A fast, high-protein meal the whole family loves. Shredded rotisserie chicken with taco seasoning and salsa, loaded onto corn chips or wraps with melted cheddar, avocado, and fresh toppings. Ready in under 15 minutes.

Ingredients
- 2 cups shredded rotisserie chicken (organic Whole Foods rotisserie chicken)
- ½ packet Whole Foods Mild Taco Seasoning
- ½ jar (or more to taste) 365 Organic Mild Chunky Salsa
- Corn chips
- Corn (to preference)
- ½ cup black beans or chickpeas (optional)
- 1 cup diced cheddar cheese
- Avocado oil spray
- Diced avocado
- Greek yogurt or sour cream
- Sliced green onions
- Lime wedges
Instructions
- Preheat oven to 375°F.
- Shred the chicken using a chicken shredder.
- In a pan, combine chicken, taco seasoning, and salsa.
- Heat a few minutes and taste. Adjust salsa as needed.
- Spread corn chips on a baking sheet.
- Layer with corn, beans or chickpeas (optional), chicken mixture, and cheddar.
- Bake 5 to 8 minutes until cheese is melted.
- Pull out and immediately top with diced avocado, Greek yogurt or sour cream, green onions, and a squeeze of lime.
