Simple Pumpkin Oat Cookies
Clean and simple 5-ingredient pumpkin cookies made with oats, perfect for a healthy fall snack or dessert. Only takes 10 minutes to bake!

Ingredients
- ½ cup pumpkin puree
- 1 cup rolled oats
- 4 tbsp maple syrup
- ⅓ tsp cinnamon
- ½ tsp vanilla extract
Instructions
- Heat oven to 360°F. Line a baking sheet with parchment.
- Mix pumpkin, maple syrup, and oats to form a thick dough. Stir in cinnamon and vanilla.
- Portion 8 to 10 cookies and flatten slightly.
- Bake 8 to 10 minutes until set. Cool fully on the sheet.
