My Ultra Light Endurance Granola for Marathon Carb Loading

  1. Preheat oven to 325°F (163°C).
  2. In a small pot over very low heat, melt butter with vanilla.
  3. Stir in maple syrup, cinnamon, and salt.
  4. Add oats directly to the pot and mix until coated.
  5. Spread mixture on a parchment-lined sheet.
  6. Drizzle 1 tbsp honey on top in a criss-cross pattern.
  7. Bake 25 minutes. Remove, stir, press flat.
  8. Bake 20 minutes more until edges darken.
  9. Cool completely to crisp up.
