My Ultra Light Endurance Granola for Marathon Carb Loading
Designed specifically for runners who want high carbohydrate intake without the heavy fats, nuts, sugar alcohols, or ultra-processed ingredients found in many commercial endurance products.

Ingredients
- ¼ cup maple syrup
- 1 tbsp honey
- 0.5 tbsp butter
- 1 tbsp vanilla extract
- 1 cup rolled oats
- 1 tbsp cinnamon
- 1 tsp pink salt
Instructions
- Preheat oven to 325°F (163°C).
- In a small pot over very low heat, melt butter with vanilla.
- Stir in maple syrup, cinnamon, and salt.
- Add oats directly to the pot and mix until coated.
- Spread mixture on a parchment-lined sheet.
- Drizzle 1 tbsp honey on top in a criss-cross pattern.
- Bake 25 minutes. Remove, stir, press flat.
- Bake 20 minutes more until edges darken.
- Cool completely to crisp up.
