Light Running Endurance Fuel: Cinnamon Raisin Granola (Low Fat High Carb)

A lighter version of granola designed for runners who need high carbs with lower fat content. Perfect for sustained energy during long training runs.

Instructions

  1. Preheat oven to 325°F.
  2. Over very low heat, blend butter, honey, maple syrup, cinnamon, vanilla, and salt until the mixture is smooth.
  3. In a large bowl, thoroughly coat the dry oats with the blended mixture.
  4. Flatten the mixture onto a cookie sheet and drizzle a bit of honey over the top.
  5. Bake for 20 minutes.
  6. Mix on the cookie sheet, stirring in raisins, and flatten into a thin layer.
  7. Bake an additional 15-20 minutes until golden brown.
  8. Let fully cool.
  9. Break apart and enjoy.
