Ingredients
- 2 bags of whole organic cranberries (680g total, rinsed in cold water)
- 1 cup organic sugar (200g - half of traditional recipe)
- 2 cups water
- Honey to taste (about 1 tablespoon)
Instructions
- In a medium saucepan, combine the sugar and water. Place over medium heat.
- Stir the mixture occasionally until it begins to bubble. Let it boil gently for a few minutes.
- Add the cranberries to the saucepan and stir frequently.
- As the cranberries heat up, drizzle a small amount of honey over them to enhance the sweetness. Adjust the amount of honey to taste.
- Continue stirring until the cranberries begin to pop. Mash the berries lightly with a spoon or spatula to help them break down. The mixture will thicken and become slightly foamy.
- Remove the saucepan from heat and pour the cranberry sauce into a heat-safe dish.
- Allow the sauce to cool slightly, then refrigerate for a few hours to set and enhance the flavors.
