Colorful Salad for Lunch
A vibrant and nutritious salad with mixed lettuces, fresh vegetables, strawberries, beets, goat cheese, and hard-boiled eggs. Perfect for a healthy lunch packed with protein and balanced macros.

Ingredients
- 1.5 cups mixed lettuces, carrots, and cucumber
- 1 oz soft goat cheese
- 2 hard-boiled eggs
- 1 medium cooked beet (80g)
- 2 medium strawberries
- 1 tbsp Organicville balsamic dressing (no canola oil)
Instructions
- Wash and chop the mixed lettuces into bite-sized pieces
- Slice the cucumber and julienne or grate the carrots
- Cook the beet until tender, then slice or cube it
- Hard boil the eggs (10 minutes in boiling water), peel and quarter them
- Hull and slice the strawberries
- Arrange the lettuce mixture as the base in a large bowl or plate
- Top with the sliced beets, cucumber, and carrots
- Add the quartered hard-boiled eggs around the salad
- Crumble the goat cheese over the vegetables
- Place the strawberry slices decoratively on top
- Drizzle with the Organicville balsamic dressing just before serving
